Ingredients
- 2 cups cooked shredded chicken (rotisserie is perfect)
- 8 oz cream cheese, softened
- 2 cups shredded cheese (a melty blend like Mexican or Monterey Jack)
- 1 can diced tomatoes with green chiles (like Rotel), drained
- 1/2 cup milk (plus more to thin as needed)
- 1 tbsp taco seasoning (or cumin, chili powder, garlic powder)
- Chopped cilantro or green onion, to finish
- Tortilla chips, for scooping
How I make it
- In a skillet over medium-low heat, add the cream cheese and milk and stir until smooth and melty.
- Stir in the shredded cheese a handful at a time, letting it melt in before adding more, so it stays creamy.
- Add the shredded chicken, drained tomatoes with green chiles, and taco seasoning. Stir until everything is warm and combined.
- If it is thicker than you like, splash in a little more milk until it is scoopable and smooth.
- Top with cilantro or green onion and serve warm, right from the skillet, with a big bowl of tortilla chips.
Make it your own
